This flavorful, hearty meal for the carnivores in your family is a holiday favorite that will fill your table with earthy aromatics while keeping your kitchen free of added dishes.
Herb-Crusted Rib Roast
1 standing rib roast (4 1/2-5 lb)
1 T. Chicago steak seasoning
3 T. chopped fresh rosemary
2 T. fresh thyme, stripped from stems and chopped
Preheat over to 450 degrees.
Place roast in bottom of roasting pan, fat side upward.
Mix spices and press mixture into meat on all sides.
Let roast stand until at room temperature before roasting.
Bake for 30 minutes uncovered.
Reduce heat to 350 degrees for approximately 1 hour
or until your meat thermometer registers 145 degrees
for medium rare. Let stand for 15 minutes before carving.
Meat will continue to cook and will best retain juices by resting.
Serve with garlic mashed potatoes or oven roasted reds
(as pictured) and a fresh salad with your own favorite homemade
salad dressing and croutons.
